Low Carb Pinwheel finger sandwiches and Cuisinart knife review.

My Aunt made these pinwheels for Christmas and they were so addictive that I had to learn how to make them myself. These are the cutest appetizers to take to a party or put in a school lunch. The great thing about pinwheels is that they are extremely easy to make and entirely customizable. Stay tuned for the Cuisinart knife set review at the end.

Use whatever tortillas you like. The wraps or burrito size are perfect for this. I try to eat a low-carb diet since carbs are a narcoleptic's kryptonite. Carbs exacerbate sleepiness. Remember to make it your own. These can be made allergy-friendly, vegan, halal, kosher, keto, whatever your heart desires. You just need a wrap or tortilla, a spread or condiment, and toppings. The sky is the limit.  I made two types of pinwheels. Jalapeno Popper and Italian.


Jalapeno Popper Pinwheels 

Makes about 10 pinwheels depending on how thick you slice them and how much mixture you spread. 

2 Tortillas or Wraps

4 oz softened cream cheese 

1/2 tbsp ranch seasoning

1 cup shredded cheddar cheese 

1 diced Jalapeno pepper



Italian Pinwheels

Tortillas

4 oz softened cream cheese 

Italian seasoning 1 tbsp

Sliced Provolone

Salami

Pepperoni

Roasted red pepper

Pepperoncini

Spinach or green leaf 

Directions

Leave your cream cheese on the counter to soften while you are prepping your assembly station. If you forget, you can also put it in a small bowl and soften it in the microwave in ten-second increments. You don't want it to be too soft or hard. Just in the middle. Enough to mix your seasoning in. 

First, make your spread. For the Italian Pinwheels, I took 4 oz cream cheese and mixed in a 1/2 tablespoon of Italian seasoning. 


Next, take a tortilla, I used Mission's Carb Balance wraps. They are delicious. For the Italian, I alternated Spinach Herb and Tomato Basil wraps and Whole Wheat for the Jalapeno Popper. They were perfect for these. Spread the cream cheese mixture evenly over the tortilla. 



Add your toppings. 


TIP: Shift your ingredients towards the side you will start to roll on. The ingredients will shift as you roll and you don't want to have a lot hanging out when you're done. Don't go overboard with your toppings. Do a single layer of each until you get a feel for how the roll sticks together. 

The Jalapeno Poppers were super easy. Take a fresh whole jalapeno and take the seeds out, dice it, and put it in a small bowl with 4 oz of softened cream cheese, a cup of shredded cheddar cheese, and a half tbsp of ranch seasoning. Spread this mixture a half-inch thick on your tortilla. 

When you are ready to roll take a little edge and fold it over pushing down with both hands as you roll with your fingers to make it tight. Once you are done wrap your roll with aluminum or cling wrap tightly and place it in the refrigerator for at least an hour. 


When you are ready to slice your pinwheels, grab them out of the refrigerator. Use a sharp knife to slice the pinwheels. This is important for aesthetics. Refrigerating your roll helps it to be sliced easier. Slice off the ends first and enjoy a snack while you prepare the rest. I sliced my rolls a little less than an inch thick. Using different flavours of tortillas not only elevates these little pinwheel sandwiches but also adds a pop of colour. 

If I was hosting a party I would have added some sprigs of rosemary and put some cubed cheese and fresh veggies along the outside with some kind of herbed dip in the middle. Best Knives

Featured in this recipe are my favourite knives. I will never promote anything I don't actually use or believe in. I needed knives and I always thought you had to spend a lot of money for good quality knives. Cusinart knives
These are the best knives I have ever owned. I need to learn the proper uses and names but the ones I use the most are the small blue one and the large green one. When you are used to dull knives you don't know how to act when you finally get sharp ones so be careful. These are so sharp you can cut yourself and not realize it. I can now slice tomatoes without smushing them. I bought these in October and it is February. They are still as sharp as the day I got them and the colours have not washed off.
